As our birds are reared longer than most supermarket birds, ours cook about 30% quicker and are always juicy when cooked to temperature. So we generally cook them with nothing but a little olive oil, salt and pepper.

However, we have a number of customers who love to brine theirs. Although we haven’t tried it yet, we often get asked for tips, so here are some of the most popular recipes we’ve found to get you inspired.

Remember though, our birds cook quicker than most, so any recipe you use, please make sure that when it comes to cooking, you consider using a thermometer to tell you when it’s done.
