Turkey Gratin recipe

The beauty about this recipe is that it can be used as the base for many others! Add vegetables, maybe some left over ham, forget the gratin topping and put on a pastry top – you get the idea! It is adaptable to whatever you have on the day, and also a really good one to freeze. If you have less turkey, simply make less sauce.

Created by friend of Bramble Farm Turkeys, Ruth Macintyre of Ruth’s Little Kitchen, there is no salt added to the recipe as the parmesan already has plenty – we would recommend tasting the sauce before you add it in.

Cooking time - 25-30 mins

Ingredients

  • 500-800g cooked turkey

  • 50-75g fresh breadcrumbs (fresh ideally)

  • 60g of parmesan cheese, grated

  • 50g butter- plus a little extra to butter dish

  • 3 tbsp plain flour

  • 400 ml chicken or turkey stock

  • 300ml single cream

  • 2 tsp of Dijon mustard
