Quick and easy Turkey, chorizo and prawn paella recipe

During the week on the farm, we need really quick and easy but tasty recipes. This is an adaptation of BBC Good Food’s chicken and chorizo paella recipe. We cook ours in half the time and have made some cheats. We use microwave rice and leftover turkey.

Prep & Cook time 15-20 mins

Serves 4-6 in our house - depending on hunger and amount of leftover turkey

Ingredients

• 1 tsp olive oil

• 500g of cooked Turkey breast or thigh meat (or however much you have or like)

• 1 onion, finely chopped

• 1 large garlic clove, crushed

• 100-200g cooking chorizo, diced (or however much you have or like)

• 1 tsp turmeric

• pinch of saffron

• 1 tsp paprika

• 250g microwave rice

• 850ml hot chicken or vegetable stock

• 200g frozen peas (we also sometimes add sliced peppers)

• Approx. 200g of de-frosted or fresh king prawns (Optional)

• 1 lemon, cut into 1/4 , to serve

• A bunch of parsley, chopped, to serve

Method

We used cooked leftover turkey. If using raw turkey, heat the olive oil in a deep frying pan over a high heat. Brown the chicken all over – don’t cook completely. Once browned, transfer to a plate.

1. (If using frozen prawns) Defrost prawns in advance

2. Heat casserol or large frying pan to a medium heat with a teaspoon of oil

3. Add cubed chorizo and fry until browned

4. Lower heat and add the onions and cook slowly until softened, 5-10 mins. Add the garlic, stir for 1 min.

5. Stir in the spices, then tip in the rice. Stir to coat the rice in the oils and spices for about 2 mins, then pour in the stock, return the chicken to the pan, add the peas and simmer for about 5 minutes, stirring occasionally.

6. Towards the end, if you’re adding prawns add them to heat through if already cooked (add earlier if they’re uncooked)

7. Season well with salt and pepper and serve with the quartered lemon pieces and some chopped parsley.
